This salad has been a go to dish of mine for a long time. I feel like everyone scrambles when they have people over or are invited to bring a dish to pass. "What do I make? "Will they like this? "Screw it, I'll bring cupcakes." Don't give up, this is a very SIMPLE salad that I have made time and time again. It's a crowd-pleaser and it's my favorite kind of recipe! SIMPLE, easy, fast and delish. I truly believe that salad is the best side dish, you can really make it what ever you want, this particular salad is a good mix of spice from the onions, sweet from the cherries and acidity from the dressing!
Ingredients For Salad ............................ 1 Bag Washed Spinach 1/4 Red Onion Sliced Thin 8 Dried Cherries Minced 1 Large Carrot "stripped" 1/4 C. Toasted Pine Nuts 1/4 C. Shredded Parmesan Salt & Pepper Ingredients For Dressing ............................ 1/8 C. Flavored Balsamic Vinegar 1/8 C. Regular Balsamic Vinegar 1/2 C. Olive Oil 1/2 Tbsp. Mustard 1/2 Tbsp. Honey 1 Tsp. Dried Thyme Black Pepper & Salt Instructions
1. Make sure that the spinach is washed and place it in a bowl. 2. With a mandolin, or a knife, slice the red onion as thin as you can. 3. Peel the carrot with a potato peeler, after the outside skin is off, continue using the peeler to make large carrot "strips" until the carrot is gone. Place both the onions and carrots in the bowl. 4. Dice the dried cherries and add them with the pine nuts. 5. Lastly top with shredded cheese and season with salt and pepper to taste! 6. For the dressing, place all ingredients other than the oil in a bowl together. Slowly whisk in the oil to make the vinaigrette. I personally use a cinnamon pear or a black cherry balsamic but you can use what ever you like! The dressing will make extra so don't feel the need to use it all. 7. Toss everything together and enjoy! Pro Tip: Add chicken to this for an amazing lunch!
