I have been hearing SO much about low carb meals in the last few months; so, I wanted to try a few out! You all know that cheese is my weakness and that FETA is my favorite cheese. So, this recipe is pretty much everything I love in a dish! Even though this dish is low carb, you can totally pair this with pasta or bread if you need to! Just keep in mind that because it is a low carb recipe it is way higher in fat; so, it may not fit into triditional meal plans!

Ingredients ............................ 1½ lbs Boneless Skinless Chicken Breasts 3½ oz Green Pesto 1 2⁄3 C Heavy Whipping Cream 1 White Onion ½ lb feta cheese, diced 2 garlic cloves 1 Tbsp Butter 1 Tbsp Olive Oil *Optional Cherry Tomatoes salt and pepper Instructions ............................ 1. Preheat oven to 400 2. In a large Cast Iron Skillet add oil and butter and turn on medium high heat. Cut the chicken into small cubes and add to skillet. Season with salt and pepper and cook all the way through. 3. Mix pesto and heavy cream in a bowl and set aside. 4. Remove the chicken from the pan and set aside. Place diced onion and diced garlic in the pan and cook through. After onion is cooked, add the chicken back in and pour over pesto cream mixture. 5. Place in a baking dish. Sprinkle feta cheese over it and bake in the oven for 20-30 minutes. 6. OPTIONAL* On another small sheet pan place cherry tomatoes, drizzle with olive oil and bake in the oven along side this dish! 7. Serve hot with tomatoes over greens!
