Paleo "Not Fried" Fried Chicken

When I used to eat fast food my place of choice was KFC. I'm a sucker for fried chicken & mashed potatoes! Seriously, it's like major comfort food for me, I would eat it every single day. I have been working on this recipe for a long time and I feel like I finally got it down. I use this same recipe for chicken strips, chicken nuggets, chicken cutlets, pretty much any kind of breaded chicken recipe you ca think of! This recipe is 100% paleo & gluten free and a great sub for "fried" chicken!


Ingredients ............................ 3 Thin Chicken Breasts (or cut in strips) 2 Eggs 2 Tbsp Almond Milk 1 Cup Almond Flour 1/4 Coconut Flour 1 Tbsp Granulated Garlic 1/2 Tbsp Granulated Onion 1/2 Tbsp Paprika 1/2 Tbsp Celery Salt 1/2 Tbsp Dried Thyme 1/2 Tbsp Salt 1/4 Tbsp Black Pepper Instructions 1. Preheat the over to 400. 2. Crack the eggs in to a bowl and whisk them together with the almond milk to create the first part of your battering station. 3. In a separate bowl combine the remainder of ingredients and mix together 4. Place a cooling rack on a baking sheet 5. First place the chicken in the egg wash and then second in to the almond flour mixture make sure to coat evenly in both. 6. Bake in the oven till cooked through (about 20 -30 minutes) PRO TIP: If you want to have these as "frozen" chicken nuggets, after you bake them cool them completely and freeze! You can use them bake them again just like you would chicken nuggets you get at the store.
