I'm in love with zoodles, if not only just because it's fun to say. The truth is, I was a pasta addict before I started on my health and fitness jorney. Anytime I went out to eat I always ordered some type of pasta dish! It was my carbohydrate weakness and it got me in a lot of trouble. It's safe to say that pasta was the hardest thing for me to give up, and so I needed to find a good HEALTHY alternative. A lot of people recommend spaghetti squash which I do enjoy, but Zucchini noodles always were a little better in my eyes, I enjoy the texture and flavor much more! Pesto is an amazingly flavorful additive that can be used with tons of different recipes.
One of the things that I really enjoy about it is that it freezes well! If you tuned in to my live cooking demo you heard some of the other things I used the frozen pesto cubes for! They are a handy little thing to have in your freezer for a little added flavor in your dishes!
Here is the shopping list that I posted for all of you! It's a very small list of ingredients needed, but don't be fooled this dish is FULL of flavor! Let's jump right in to the recipe!
Ingredients ............................ 2 Chicken Breasts Butterflied 2 C. Fresh Basil 3 Cloves of Garlic 1/3 C. Pine Nuts 1/2 C. Olive Oil 1/2 C. Parmesan Cheese (optional) 1/3 Tsp. Red Pepper Flakes 2 Zucchini's Spiralized or "peeled" Salt & Pepper to taste Instructions
1. Preheat your grill or oven, if using the oven set the temperature to 400º. 2. Season the butterflied chicken with olive oil, pepper flakes, and salt. Place them on a baking sheet and put them in the oven. 4. While the chicken in cooking spiralize the zucchini in to ribbons! 5. Combine the garlic, basil, and pinenuts, S&P to taste in a food processor (This would also be where you would add the cheese). After mixed, drizzle in the olive oil slowly to combine all the ingredients. 6. In small sauté pan heat some olive oil over medium high heat. Add in a few pepper flakes and fry for a few seconds. Throw all the zucchini in to the pan and season will S&P to taste. Heat until tender (3 - 4 minutes) 7. After it's all done add a few TBSP of the pesto you have made! Top with sliced with either baked or grilled chicken and serve!! Enjoy this very easy but amazing dish!
