So you should all know by now that any time I do The Whole30 program, BACON becomes a food group of it's own! In the spirit of honesty this recipe came to me earlier today. I have never made THIS spicific hash before, BUT that's the beauty of hash! It's one of those super convenient "dump" dishes. When I have an array of left over veggies, there isn't any better way to use them than to throw them in a skillet and mix them with potatoes! Come on though, bacon and jalapeno's? Can you really go wrong? Whole30 gives me the freedom to do what I love.. Cook from the heart! It's almost like a game for me. Using the foods the fit the "rules" of the program to make something delicious!
So today, we are making some hash!
Ingredients ............................ 1 Bell Pepper *Any Color 6 Pieces Bacon (whole 30 approved) 1 Medium Red Onion Diced
3 Medium White Potatoes 3 Cloves of Garlic 1 Roasted Jalapeño (Skinless & Seeded) Salt & Pepper to taste Instructions
1. Preheat your oven to 425º. Place the oven rack all the way at the top of your oven. 2. Dice up the bacon and place in a large cast iron skillet, no oil needed! Let the bacon cook until crispy then remove from the pan and set aside, DO NOT remove the grease. 3. Clean and dice the bell pepper, onion, jalapeño and potatoes and place the potatoes in a bowl to the side. 4. With the heat still on add in the onions and peppers and cook for a few minutes in the skillet. 5. After they have softened add in small diced potatoes and diced garlic cloves and be sure to season to taste. 6. After all the ingredients are cooked through, place in the oven and brown the top to get everything super crispy! You can also broil if preferred! 7. Enjoy! This is a great side dish for dinner or great with chorizo and eggs!
