Artichoke Chicken Bake

I love artichokes. That could be the entire description for this recipe! In all honesty I saw a similar recipe to this scrolling online and HAD to try it. Now ALSO being me, I decided that I needed to change it, after all recipes are just suggestions right? This is a super simple dinner that you can throw together in the morning or the night before and have an amazing dinner!


Ingredients ............................ 12 Boneless Skinless Chicken Thighs 12 oz Jar Marinated Artichokes 1/2 Red Onion Sliced Thin 4 oz Feta Cheese 2 garlic cloves salt & pepper Instructions ............................ 1. Place the chicken thighs unseasoned in a large glass bowl. Pour over the entire jar of artichokes, including the liquid. 2. Add in the red onion & garlic and mix, place a lid or cover over the bowl and marinate for 2-4 hours, overnight if you are planning ahead. 3. Before preparing make sure your oven is preheated to 425. 4. Drain as much of the liquid you can, and then arrange the chicken around your cast iron skillet, I had to stack mine. This is also the time if you choose to add additional salt and pepper that I would recommend seasoning them. 5. Bake at 425 for 30 minutes. 6. Then remove from oven, crumble feta and broil for additional 5-8 minutes!
